The secret to these juicy veal chops is to start with very thick chops (1-1/2"), and then to let them basque in an herbed olive oil for several minutes after grilling them. Very simple to prepare. Swordfish Kebabs w/ Yucatan Orange Paste
A simple preparation for swordfish that packs a lot of flavor. The orange-herb paste is a cinch to make and adds moisture to the fish. Mix any leftovers with a bit of mayo, lemon juice and cilantro and stuff it into pita pockets. |
