Our feature for the month of June is Substantial Salads. We're not talking a bowl of lettuce here. We've got salads that make a nice first course for an evening of entertaining. Salads that make fantastic side dishes. And salads that stand on their own for a great light dinner or lunch. Elegant salad, pasta salad, rice salad, potato salad, chicken salad, seafood salad and more. So many salads ... so little time!

We also have all the pieces for the ever popular Chicken Caesar Salad: pile some shredded Romaine lettuce into a bowl. Toss with our Low-fat Caesar Salad Dressing. Top with some Grilled Chicken Tenders. Yum! Much better than any Chicken Caesar Salad that you'll find in a restaurant. |

An elegant and delicious salad perfect for entertaining. I've served this to many people who have never had fresh fennel before and they loved it. An interesting and unique combination of flavors. You could substitute mesculun salad mix or spinach for the arugula. |

This potato salad, made with sweet potatoes, is a nice alternative to the classic potato-and-mayonnaise one. It's simple to make, can be made ahead, and it's great for picnics, buffets and potlucks because it's best at room temperature. |

Fingerling Potato Salad w/ Sherry-Mustard Vinaigrette
This is a really fun and unusual alternative to regular old potato salad. The small, finger-shaped potatoes are roasted in a bed of salt to impart a nice texture and flavor and to make it easy to slip the skins off: no peeling required. Crispy, thick-slab bacon and hard boiled eggs are nice additions. |

A perfect dish for any large gathering any time of the year. It travels and keeps well and can be served at room temperature or chilled. Serve it as a side with meat or chicken, or all by itself for lunch. And it is very easy to make! |

Tortellini Salad
Tortellini salad was very trendy back in the 1980's when I first discovered this recipe. I've made it countless times since then, and it's always a hit. It's still good today. The original recipe came from Formaggio Kitchen in Cambridge Massachusetts, and, not surprisingly, they are still in business today in the original location and also in a second location in downtown Boston. It's nice to know that some things do last! |

Pasta & Seafood Salad with Basil
I call this a sophisticated pasta salad! It's perfect for summer entertaining because it's a one-dish meal, and shrimp, scallops and squid dress it up. Serve it on top of mixed greens for individual plating. For picnics, pile it all into a decorative container and refrigerate until you head off for the picnic. It's best slightly warm or at room temperature. |

Curried Chicken Salad
This is a great summer dish because the only thing you need to cook is the chicken. Use as much curry powder as you want: as written, this recipe yields a very mild curry flavor. Sour cream instead of the traditional mayonnaise means that this salad will travel well for picnics or potlucks. Serve it on rolls or in pita pockets. To dress it up, serve it on plates on a bed of lettuce and garnish with lemon wedges. |
