In honor of Valentine's Day, our feature this week is Sweets for Your Sweet. We've got all kinds of choices for you. |
|
Start the day with a Banana Yogurt Smoothie and some Apple Cinnamon Muffins. Pack some Chocolate Chip Oatmeal Cookies in your sweetie's lunch. Or how about a Moist Chocolate Cake or a Brownie Baked Alaska or a Strawberry Napoleon for dinner's dessert? End the evening with Orange-Almond Biscotti with espresso (decaf, of course!). |

Valentine's Day is a time to indulge. So enjoy! |

Banana Yogurt Smoothie
Easy to make and good for you, this delicious smoothie makes a quick breakfast or anytime snack. If you like your smoothies thicker, just use less milk.
|
Apple Cinnamon Muffins
These moist muffins are yummy! And much better for you than the store bought variety because they have less fat and sugar and contain oats (fiber) too. Turn the oven on, mix up the batter and pop 'em in the oven. In less than a half hour, you've got hot, home baked muffins.

Ruth's Moist Chocolate Cake
One of our subscribers (whom we've dubbed "Dessert Boy") wrestled this recipe from his girlfriend and begged us to make it. I was skeptical since I don't usually start things with a mix but I decided to try it. Glad I did. This cake is so easy to make and so moist. It's delicious!
|
Individual Brownie Baked Alaskas
My husband says that these are "kid cool". Baked Alaskas were considered to be very high-brow in their time (circa the 1960's) but these little ones are really very easy to make. The key is be sure that the ice cream is frozen solid, and to work quickly when covering the ice cream with the meringue.
|
Fresh Strawberry Napoleons with Cream Cheese Mousse
A delicious and easy-to-make dessert with an elegant presentation, these Napoleons are great for any festive occasion but simple enough for a weeknight meal. Substitute blackberries or raspberries and a complimentary jam for the strawberries ... whatever is in season and available.
|
Orange-Almond Biscotti
Biscotti are traditional Italian cookies that are "twice baked". Making your own is far less expensive than buying them at Starbucks! Store them in a ziploc bag or airtight container and they'll keep for two weeks or more. These cookies are crunchy but not jaw breaking (thanks to the small amount of butter in them). They are best when dunked in coffee or milk.
